This pomegranate-raspberry drink is so full of flavor that it can be a dessert by itself. Pomegranate is such a special ingredient with a distinctive flavor and beautiful seeds that are like gems. Raspberry sorbet is a great pair for pomegranate making the drink a true treat.
This recipe gives a general idea of the amounts of ingredients you need to make the drink. It makes four large drinks.
Pomegranate-raspberry drink
- 1 1/2 cup (3.5 dl) mineral water
- 2 1/2 cups (6 dl) pomegranate juice, store-bought
- 4 scoops of raspberry sorbet
- 1 pomegranate
- 4 tablespoons lime juice
(- a splash of tequila or vodka)
Cut the pomegranate in half. Squeeze a bit juice out over a glass. Take a spatula or a wooden spoon and whack the back of the pomegranate over a bowl. This should release the seeds. Save the seeds and the squeezed juice.
Take out four large glasses. Fill up the glasses leaving room for the sorbet. Pour in around 1/3 mineral water, 2/3 store-bought pomegranate juice. Share the freshly squeezed pomegranate juice between the glasses. Squeeze a touch of lime into all the drinks. Add tequila or vodka if desired. Stir.
Scoop a generous spoonful (or two!) of raspberry sorbet on all the drinks.
Decorate with the pomegranate seeds and lemon balm leaves.
