These sweet little meringue cakes with fresh red and black currants are so pretty together. They have the perfect crunchy surface and a soft inside. Sounds like I'm describing something almost unreal. No, I'm talking about mini pavlovas.
Ingredients (makes 20)
- 8 egg whites
- pinch of salt
- 2 1/2 cups (6 dl) sugar
- 4 tablespoons cornflour
- touch of vanilla extract
- 2 teaspoons white vinegar
{ topping }
- 3 cups (7 dl) whipping cream
- red and black currant, or other fresh berries
Preheat the oven to 350 F (180 C). Whisk the egg whites with the salt until firm peaks form. You don't want the eggs too stiff yet. Turn down the speed of your electric mixer, and gradually add in the sugar. Keep beating until the foam is stiff and glossy, around 5 minutes. Sprinkle the cornflour, a few drops of vanilla and the vinegar on top. Fold to combine.
Spoon the meringue onto a baking sheet covered with parchment paper. For this recipe size, you'll need two sheets. Spread and smooth the dollop to form a little circle. I made around 3 inch (8 cm) circles. You don't need to leave a lot of space in between - the pavlovas don't spread around as much as up. Put both of the baking sheet in the oven, and turn the heat down to (300 F) 150 C, and bake for 30 minutes. Turn the oven off, and leave the pavlovas in for another 30 minutes. Let them just be, don't keep peaking in! Take the baking sheets out of the oven, and let the pavlovas cool in room temperature. I kept them in a cool place loosely covered over night.
Just before serving, dollop whipped cream on top of each pavlova. Decorate with red and black currants. Other berries or fruit will do as well, just choose something a bit sour to balance out the sweetness of the meringue. Heavenly.
