Do you also have those days when you just want to get a good sandwich? For me, on a day like that a pick up won't do - it has to be homemade. A sandwich doesn't need to be only a snack, it also makes a satisfying meal in no time. The sauce of this sandwich is definitely not your everyday dressing - the whole grain mustard takes the sandwich to another level.
Ingredients (makes 4)
- ciabatta style loaf of bread
- 4 chicken breast fillets
- 1 red onion
- 4 long slices of pickles
- 2 tablespoons whole grain mustard
- olive oil
- salt & pepper
{ sauce }
- 3 tablespoons whole grain mustard
- 4 tablespoons creme fraiche
- 1 tablespoon honey
Choose some good quality chicken cutlets. Rub the whole grain mustard, olive oil and a touch of salt and pepper on the chicken, and let sit in the fridge for 30 minutes. While the chicken is in the fridge, cut the red onion and cook on medium heat in a splash of olive oil for 5 minutes until soft. Mix the sauce ingredients and set it aside. Slice the small loaf into four parts and slice those pieces open. I grilled the bread in the oven for a few minutes for extra crispiness.
On a grill pan, fry the mustard marinated chicken on high heat until cooked. Assemble the sandwich. Start with a bit of the sauce. Then place the chicken on top of the bread slice. Follow with the pickles. Add the onions and a bit more sauce on top.
Cover with the top part of the bread. Or go your own way - it will taste great, no matter what order.
