A brand new week, all new recipes. How has your week started? I thought I would share a simple and often overlooked soup recipe with you on this lovely Monday. Onions soup is soothing, gentle and comforting. Oh, and those cheesy toasties on top are perfection. Especially enjoyed during a slow and relaxed dinner time with family and friends. You know, sometimes the most simple things are the best.
Ingredients (serves 6)
- A bit less than 2 pounds (850 g) mix of onions (like 3 red onions, 3 yellow onions, 2 leeks and 4 shallots)
- 5 garlic gloves
- 3 tablespoons butter
- 2 tablespoons olive oil
- 6 1/2 cups (1.5 liters) chicken stock
- salt & pepper
- sage leaves
- 6-12 slices of baguette
- 5 ounces (140 g) gruyere cheese
- a few dashes of worcestershire sauce
Peel and chop all the onions. You can choose your own mix. I like to use yellow and red onions, leeks, shallots and garlic. Heat up butter and olive oil in a pot, and add in the garlic and a few sage leaves. Stir everything around and add the chopped onions. Season with salt and pepper. Cover the pan with a lid and cook slowly for 30 minutes stirring occasionally.
Remove the lid, and cook the onions for 20 more minutes without coloring them too much. Slow and soft cooking with bring out the sweetness of the onions. Add in the stock. You can choose to use either homemade or store bought, vegetable or chicken. Bring the soup to a boil. Reduce the heat a bit, and let simmer for 10-15 minutes. I skimmed some of the fat off the surface.
Toast the bread slices. Scoop the soup into oven proof bowls and top with the toasties. Sprinkle the breads generously with roughly grated gruyere (or why not parmesan). Add a few dashes of worcestershire sauce on top. Place the bowl on a baking sheet and pop them into a hot oven until the cheese is bubbly and golden. Carefully lift the hot bowls to the table to serve.

This would hit the spot right now. I know what you mean about a slow and relaxed dinner. We strive for that very thing every night. I love the mixing of different onions. This would be well received at our table.

onion soup is one of my all time comfort foods. soo good! your mixed onion recipe sounds divine!

This recipe is typical from my grand mother's place (the best onion soup ever!). In south of France, we eat it when parties or weddings are over, and it's really early morning. We prepare the food the day before, and eat it at 5 or 6 am before going to bed ;-)

Onion Soup is one of the best comfort foods out there, I couldn't get enough of it with my second pregnancy either. And now my 2nd son loves to have a bowl!
