Spring pea salad is a great side dish for an Easter menu. We had the salad with supper tonight - it's the perfect spring food. I think we will be making it for Easter as well. This recipe is dedicated to all goat cheese lovers!
This recipe serves 4-6.
Ingredients:
- 1 pound (450 g) green peas (defrosted or fresh)
- 1 shallot
- 3/4 cup (1.7 dl) soft goat cheese
- 1 tablespoon capers
- 1/2 cup (1.2 dl) fresh mint
- 2 teaspoons olive oil
- generous squeeze of lemon juice
- salt & pepper to taste
Chop the shallot and a bunch of mint leaves. In a large bowl, mix everything but the peas and goat cheese.
Add the peas to the mixture. Stir well. Crumble the goat cheese in and mix.
Taste the salad. If it needs more acid, squeeze more lemon juice in, and add more salt and pepper if needed. Cover the bowl and refrigerate for 30 minutes before serving. So easy and good.
