Wow, it's Friday already! I've been taking a little break from recipe testing and blogging since Monday to work on a new project. I talked a bit about it already with my Twitter and Facebook friends, so some of you might already know that the project will be something especially created for my Finnish speaking readers. I'm also planning quite a few changes for Sparkling Ink, so I've been a busy bee this week. I can't wait to tell you more about it all - soon!
With more sunny spring days, these lemon cupcakes seemed like the appropriate choice for this weekend's baking project. I loved the strong citrus flavor of the cake and the glaze is absolutely divine. Have a sweet weekend!
Ingredients (makes 18)
- 1 1/2 cup (3.5 dl) flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1.25 dl, about 4.5 ounces/125 g) butter, soft
- 1 cup (2.5 dl) sugar
- 2 eggs
- 1/2 cup (1.25 dl) buttermilk
- 1 teaspoon vanilla extract
- zest of 1 lemon
- juice of 1 lemon
{ glaze }
- 2 tablespoons lemon juice
- 1 - 1 1/2 cups (2.5 - 3.5 dl) confectioner's sugar
Combine flour, baking powder and salt. In a separate bowl, beat soft butter and sugar with an electric mixer until light and fluffy. Add eggs one at a time. Mix vanilla extract, lemon zest and juice with buttermilk.
With mixer on low speed, add in the dry ingredients in three batches, alternating with two additions of buttermilk mixture. Spoon the batter into a muffin tin lined with paper cupcake cups. Depending on the size of the cups, the batch will make around 18-22 cupcakes. Bake at 350 F (175 C) for 17-20 minutes until a toothpick inserted in the center of a cupcake comes out clean. Let cool.
To prepare the glaze, start gradually adding confectioner's sugar into 2 tablespoon of freshly squeezed lemon juice. I simply mixed it with a fork. Stop adding sugar when you like the thickness of the glaze. Spread the glaze on top of the cupcakes, and if you'd like, decorate with lemon zest.

Lovely to see you here again, Kira! I like lemon in bakery when it's strong and only lemon, not mixed with other flavors and spices. These cupcakes are so sweet and fresh at the same time!
