This week we have had gorgeous blue skies and sunny evenings, so we haven't spent much time indoors after the work days. Last night, we made this super simple and quick dinner from just a few ingredients - not forgetting good flavors, and set the table on the balcony. There will be plenty of rainy fall days to come for enjoying more time in the kitchen.
Ingredients (serves 4)
- 14 ounces (400 g) fresh cheese ravioli
- 12 ounces (340 g) cold smoked salmon
- 7 ounces (200 g) cubed feta
{ sauce }
- 1 1/2 cups creme fraiche (or thick sour cream)
- 2 tablespoon capers
- 1 shallot, minced
- a squeeze of lemon juice
- coarse salt & pepper
- fresh arugula for serving
Cook ravioli in generous amount of salted water as directed on the package. Cut the salmon into rough bite-size pieces. Mince the shallot, and mix all the sauce ingredients. Taste to perfect the amount of lemon, salt and pepper.
Drain the pasta and transfer into serving dishes. Spoon cold sauce on the ravioli, and top with lots of salmon and feta. Finish with a few more capers and arugula leaves.
Such simple yet delicious flavours! Looks beautiful :-)
