The citrus fruits are incredible this time of year. Grapefruits, oranges, tangerines. Just seeing a bowl of them brightens up my morning. Year 2011 has started busy with more new challenges than I expected a few months ago. Doesn't new year just always make you rethink life? Change a few routines. Try something new.
This salad fits the January state of mind well. Beet, citrus, red onions and cranberry dressing are perfectly sweet and tangy together. Just what I need for a simple lunch or light dinner. A kind reminder to slow down and enjoy simple things.
Ingredients (serves 4)
- 4 pickled red beets
- 3 tangerines
- 1 small red onion
- 1 large punch of frisee lettuce
{ dressing }
- 3 tablespoons cranberry juice
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
Slice pickled beets and peeled tangerines. Cut a small red onion into thin strips. Mix the dressing ingredients and pour some in a bowl full of lettuce. Toss until lightly coated. Add in sliced beets, tangerines and onion. Drizzle with a touch more dressing and serve.

I really like fresh fruity flavours in a salad especially orange with a bitter leaf (spinach, rocket, watercress or as you have done frisee). Cranberry juice in the dressing is a great idea. I'll try your version instead of my favourite at this time of year - mandarin, lime juice and mustard with olive oil. Thanks Tiina

The tangerine slices are so pretty and look amazing against the greens and beets. I bet this salad taste as delicious as it looks.

Hi Tina, this looks sooo yummy! I'm a beet fanatic! I might try this with roasted beets! Challenges can be good as we grow from them but to keep your chin up take a peek at the latest book by Rhonda Byrne of the Secret-"The Power" It's fantastic for repelling the negative, dealing with surprises and attracting more of what you want! It changed my week big time when my purse was stolen in NYC. I got over it in a heart beet-hee- cuz I was reading this book! Be well:)

I really don't like beets. I wish I did because the are so beautiful. My tastbuds tend to disagree.
