A moment of happiness - cup of coffee with homemade cookies. These cookies have just the flavor of ginger I love and great chewy texture. I return back to this recipe time after time.
Ingredients (makes 30)
- 100g butter, soft
- 1/3 cup (1 dl) sugar
- 1 tablespoon vanilla sugar
- 2 tablespoons dark syrup (or golden syrup)
- 1 cup (2 1/2 dl) flour
- 1/2 teaspoon baking soda
- 1 teaspoon ground ginger
Beat soft butter, sugar, vanilla sugar and syrup until light and fluffy. Combine flour, baking soda and ginger in a separate bowl, and mix it into the dough.
Form the dough into three flat bars (around 1/2 inch thick) on a baking sheet lined with parchment paper. Press stripes on the bars using a fork.
Bake at 350 F (175 C) for 15 minutes or until golden. Allow the cookie bars to cool for a few minutes. Cut them into slices and cool completely. Store in an air-tight container.

I love ginger cookies! I have a recipe that uses oil instead of butter, but I'll give yours a try - maybe halving the recipe, since I'm the only one at home that eats ginger cookies :)
